After we hand harvested this Viognier, it began fermentation in stainless steel tanks. Halfway through fermentation, it was transferred to neutral French oak barrels. wine was then aged for three months, but was not allowed to go through malolactic fermentation. The Miquel estate in southern France's Languedoc region was acquired in St. Chinian from Church lands after the French Revolution. The Miquel family is the region's largest family-owned estate.
