The Coeur De Lion Estate is located in the heart of the Pays dAuge region in France. In this 17th Century farm that the finest ciders, pommeau, and calvados are produced. Passed down through generations, the estate blends traditional distillation methods with more modern techniques. To make their Calvados, Coeur de Lion used 30 different apple varieties. To obtain a juice with the correct amount of sugar, tannins, and acidity, the correct blend of sweet, bitter-sweet, bitter, and acidic apples must be used.
